Today’s lunch is full of energy for my long day ahead of me on this fabulous Monday. I will be working at the office until 5:30pm and then I will jet over to the upper east side to help my friends at the yoga store. There is a new line coming in for Summer and they needed some merchandising help to support the role out that is happening tonight. I also need to sneak in a quick cardio session at the gym to keep up with my fitness goals for my friends Vegas bachelorette party in three weeks! So I am sure you can agree that I need some energy foods!
You can make today’s dish by doing the following:
Red quinoa, cucumbers, red peppers, chick peas, red onion, avocado, and celery. Can you tell I went with a red theme?
I sprinkled a bit of salt and pepper and also made the quinoa with coconut oil, and organic vegetable stock.
